- 6 cloves garlic peeled and roughly chopped
- 1 cup yellow or white onion roughly chopped
- 3 cups cauliflower florets
- 2 cups carrots roughly chopped
- 2 cups celery roughly chopped
- 1 parsnip roughly chopped
- 1 28 oz. can of San Marzano tomatoes
- 1/3 cup dried orzo
- 1/3 cup nutritional yeast
- 3 cups vegetable stock
- 2 tsp thyme
- 2 tsp basil
- 2 tsp oregano
- pinch salt to taste
- pinch black pepper to taste
- pinch red chili flakes to taste
Add garlic, onion, cauliflower, carrots, celery, and parsnips to a large stock pot with 2 tablespoons of vegetable broth or a drizzle of olive oil and cook on medium heat for about 8 minutes.
Add tomatoes, broth, and nutritional yeast and bring to a boil.
Add orzo. Reduce heat to very low and simmer for about 20 minutes until vegetables are tender and orzo has expanded.
Remove from heat and let cool for a few minutes.
Blend the soup in a high speed blender or use an immersion blender working in batches.
Return the soup to the pot and season to taste.
