Basil, Garlic, & Smoked Paprika Dipping Sauce

This is the ultimate dipping sauce for salt crusted potatoes, bread, and your favorite veggies. Features fresh basil, roasted garlic, paprika, and optional heat with hot Hungarian paprika. Definitely double this recipe as it goes fast!

Ingredients
  

  • 2 packed cups fresh basil
  • 12 cloves roasted garlic
  • 1 tsp smoked paprika
  • 1/4 tsp hot Hungarian paprika (optional for heat)
  • 1/8 tsp salt
  • 4 tsp fresh lemon juice
  • 1/4 cup high quality olive oil

Equipment

  • 1 mortar and pestle or blender

Method
 

Roasting Garlic
  1. Heat oven on convection bake to 325 degrees F.
  2. Peel garlic cloves and wrap in foil.
  3. Place foil wrapped garlic in the oven for approximately 20 minutes.
Dipping Sauce
  1. Add all ingredients to a large mortar and pestle.*
  2. Crush ingredients together until you achieve a chunky, paste-like sauce.
  3. Serve immediately.

Notes

*The dipping sauce tastes much better when crushed in a mortar and pestle. If using a blender, do not puree but only pulse the mixture. It should be chunky with bits of garlic and basil.
