Greek Sandwich
An easy, delicious, lunch recipe for the perfect Greek inspired sandwich.

- 2 slices bread of choice
- 2 tbsp hummus
- 1 roasted red pepper thinly sliced
- 2 pepperoncini sliced
- 2 tbsp sun dried tomatoes (not in oil)
- 1/2 can artichoke hearts
- 1 small zucchini cut into spirals or thin strips
- 4-6 slices cucumber
Other Ingredient Options
- 3-4 slices red onion
- 4 kalamata olives thinly sliced
- feta cheese crumbles or plant-based cheese
Place artichoke hearts in an air fryer and cook for 10 minutes or until crispy.
Spread 1 tbsp of hummus on each slice of bread.
