Ingredients
  

  • 2 slices bread of choice
  • 2 tbsp hummus
  • 1 roasted red pepper thinly sliced
  • 2 pepperoncini sliced
  • 2 tbsp sun dried tomatoes (not in oil)
  • 1/2 can artichoke hearts
  • 1 small zucchini cut into spirals or thin strips
  • 4-6 slices cucumber
Other Ingredient Options
  • 3-4 slices red onion
  • 4 kalamata olives thinly sliced
  • feta cheese crumbles or plant-based cheese

Method
 

  1. Place artichoke hearts in an air fryer and cook for 10 minutes or until crispy.
  2. Spread 1 tbsp of hummus on each slice of bread.
  3. Stack your toppings and enjoy!
