Roasted Tomatillo Salsa

Ingredients
  

  • 10-12 fresh tomatillos
  • 1-2 yellow onions (2 medium or 1 very large)
  • 1 large jalopeno pepper
  • 1-2 tbsp lime juice according to taste
  • 1 bunch fresh cilantro with stems
  • 1/2-1 tsp salt according to taste

Method
 

  1. Remove wrappers from the tomatillos, rinse, and slice in half.
  2. Remove skin from onions and slice into quarters.
  3. Cut jalopeno lengthwise and remove seeds.
  4. Place prepared tomatillos, onions, and jalopenos on a lined baking tray and roast 25-30 minutes in oven at 400 degrees F.
  5. While vegetables are roasting, place 1 tbsp of lime juice, 1/2 tsp of salt, and cilantro with stems into a blender.
  6. After roasting, add tomatillos, onions, and HALF of the jalopeno to the blender.
  7. Blend until smooth. Taste and add more salt, lime juice, and additional half of jalopeno if desired. Blend again if needed.
