A Bit of History:
The Harry Styles song Watermelon Sugar has been stuck in my head for weeks now. When I think about the tastes of summer, I immediately conjure light and refreshing recipes. Last summer, I first tasted Crenshaw melons at Boone Hall farms down the road. They were hands down the sweetest, best melon I had ever eaten and I love the beautiful yellow color. Ever since then, I eagerly search my local farmer’s market for these wonderful delicacies to make Melon Salad with fresh mint and lime juice.
About the Recipe: Melon Salad with Mint & Lime
Google searches reveal many, many recipes for fresh melon salads, but this is our favorite way to enjoy ripe Crenshaw and watermelons all summer. We simply toss them with lime, fresh mint, and sometimes a dash of honey. Allowing the fruit to marinate for a day or two really saturates the flavor. A light, refreshing, healthy summer dessert or side dish for your next gathering.
This recipe is so easy you simply cube the melon and toss with the other ingredients!
Crenshaw Melon or Watermelon Salad with fresh Mint & Lime Juice
Ingredients
- 8-10 cups Crenshaw melon (or substitute watermelon)
- 1/4 cup fresh lime juice (more to taste)
- 1/2 cup fresh mint leaves minced
- 1 tbsp honey (optional)
Instructions
- Cut the melon into bite sized cubes. Toss all ingredients together and allow to marinate for several hours or overnight. For additional sweetness, add honey if desired. Serve with fresh mint or lime wedges.
