Rainbow Asian-Inspired Cabbage Salad

It’s A Whopper…

A Bit of History:

Ten years ago, Scott Robb of Alaska, claimed a new Guinness Book of World Records for the heaviest cabbage. The whopper green cabbage tipped the scales at 138.25 lb. That’s a lot of Rainbow Asian-Inspired Cabbage Salad! In contrast, a typical garden green cabbage weighs a mere 1-2 lb. While, the exact origins and dates of cabbage domestication remain unclear, cabbage features in cuisine around the world. In addition, cabbage boasts an array of health benefits. A single cup of cabbage contains 1/3 of our daily requirement of vitamin C and loads of antioxidants.

About the Recipe: Rainbow Asian-Inspired Cabbage Salad

Normally, my favorite way to eat cabbage is fermented sauerkraut on top of my Carrot Hot Dogs. However, I also enjoy cabbage incorporated into an Asian-inspired cabbage salad dish. Even better, this salad tastes great after marinating in the refrigerator for a day, making it perfect for lunch meal prep! Numerous recipes for rainbow salads pop up all over the internet, but the recipe below describes how we like to make this salad at home.

Even better, this salad easily accommodates several different vegetables, so feel free to use your favorites. Simply, chop vegetables such as onion, peppers, carrots, radish, cucumber, and of course cabbage. Then, toss the salad with my 1-minute oil-free Spicy Peanut Miso Sauce. Finally, top the salad with fresh citrus for an extra zing of flavor. Other vegetables such as broccoli, snap peas, and green beans would pair beautifully in this salad.

Rainbow Asian-Inspired Cabbage Salad with Oil-Free Spicy Peanut Miso Sauce

A healthy, refreshing cabbage salad with a rainbow of fresh vegetables. Tossed with an oil-free spicy peanut miso sauce. Serve as a side dish, over your favorite noodle or grain, or stuffed inside a wrap for an easy lunch.

Ingredients
  

Asian Cabbage Salad

  • 1/2-1 cabbage, finely chopped depending on size of cabbage
  • 1 seedless cucumber, diced
  • 1-2 jalopeno peppers, minced according to spice preference
  • 2 large bell peppers, chopped
  • 3 carrots, chopped
  • 1 small purple onion, diced
  • 1 daikon radish, diced
  • 1-2 tbsp fresh ginger, minced according to taste
  • 1 1/2 cups fresh cilantro, minced

Spicy Peanut Sauce

  • 3 tbsp peanut butter can substitute PB2 or other powdered peanut butter
  • 1/4 cup low sodium soy sauce or tamari
  • 1 tbsp red miso paste
  • 1/3 cup hot water
  • 2 tbsp lime juice
  • 1-2 tbsp sriracha according to taste

Optional toppings for serving

  • 1 orange, sliced
  • 1/2 cup peanuts

Instructions
 

Asian Cabbage Salad

  • Combine all ingredients in a large bowl.

Spicy Peanut Sauce

  • Combine all ingredients in a measuring cup and whisk to combine. Taste and add sriracha or more lime juice to taste.
  • Pour peanut sauce over salad and toss to combine. Allow to marinate in the refrigerator for at least 30 minutes before serving.
  • Top with orange slices and peanuts before serving if desired.
